I think the only web based MMA game out there is MMAtycoon.
I've had a dabble, not really my cup of tea but very popular.

I've been toying with the idea of doing my own game for a while and now eBoxingPromoter2 is out, I'm thinking of starting this as a background project (maybe something to do over the next 3 years).

Here's the blurb - let me know how it sounds and if there could be any additional features to include;

eMMAgym is a web based game where you run your own MMA Gym and manage the fighters based there.
You can scout and offer contracts to existing MMA fighters to join your gym, or find fighters from other disciplines like wresting or muaythai to switch over to MMA.  Or maybe a paying member will turn out to be good enough to join the team?  
Hire trainers specialising in the different MMA disciplines to give your fighters the tools they need.  Keep your gym equipped to ensure everyone has access to training gear.
Matchmake for your fighters on open cards to see if you can raise their profile and win a deal from one of hundreds of MMA Promotions around the world ranging from shoddy regional level 
basement of a bar fight clubs, to the glamour of URFC (Ultimate Rooq's Fighting Championships), R-1 Global, the RPFL, UNO FC, Rooqator and more!
Take care of your fighter's training from when they start fight camp, to the sparring partners brought in to prepare for the opponent.
Follow the action with in-depth fight reports as the fights are simulated.
Create up to 10 gyms in different countries - see if you can conquer every MMA scene!

Big mma fan, would definitely play it! Aside from WMMA by Greydog Forums (which is an offline single player game), there's some serious lack of good mma sims out there.

Will it be gym Managment only?

So the Organisations will be AI run, or will you be able to Manage Organisations and Fight Cards as well?

The main part of the game will be running the gym and managing fighters though.  In the early stages of a fighters career there will be matchmaking to do, to get your fighter some experience and noticed by one of the organisations.  I think once you get a contract with any org you can just accept or reject fights - not much matchmaking you can do yourself, so it will be more about preparing your fighters etc.

The secondary part of the game will be  to create your own organisation and see if  you can attract enough good fighters to compete with the established ones

Fighting Styles - I'm thinking: Pressure Fighter, Distance Fighter, Counter-Striker, Brawler

Anything else? 

 "background" i.e. wrestler, BJJ, boxer etc is already captured separately.

How do you figure something like a distance wrestler would work though? Or would these end up with sort of exclusionary conditions where a distance fighter will only end up being someone with a striking discipline? Or are we thinking scenarios like someone like Nate Diaz who likes to box at range but also has BJJ skills would be listed as a BJJ fighter who has a distance striking preference?

My initial reaction is that those fighting styles seem to describes striking styles more than anything.

Yeah it's tricky. 
I think I'll develop this area a lot more when I actually come to do the fight engine. I'll probably end up with different style possibilities for strikers, wrestlers and BJJers

Or...have  different styles for each of   stand up, takedowns and grappling. A wrestler starting MMA will have a style for the latter 2 but won't develop a stand up style until he's been training a while.

Something like that anyway

I could think like how right now we have Stance + Style you could do something similar maybe. While of course fighters have preferred stances in MMA, it's not as cut and dry. A lot of wrestlers fight with their dominant hand forward because it makes shots easier, while muay thai fighters will switch a lot. Fighters like Anderson Silva who mixed in Wing Chun/Bong Sau in his striking would often switch stances by changing his alternating forward foot by walking forward. 

Increasingly in modern MMA just about every serious fighter is capable of switching their stance as needed. So it might not be needed to spend much time caring about stance. Maybe instead you have a standing style and a ground style. So strikers could have some kind of striking style like 'counter-striker, technical strikes, haymakers, boxer, kicker" etc. while having a ground style of like, "sprawler, staller, scrambler". Maybe a grappler has styles for standing like, "range, patient, tie-up" and a ground style of like, "smother, ground n pound, limblocks, chokes" etc. 

Just random thoughts. When I think of fighters in MMA I think of them in whether or not they prefer to stand or grapple, how they strike, how they grapple. Wrestlers like Tyron Woodley would sit on big haymaker bombs but when grappling would go for a smothering control based game. Someone like Derrick Lewis would also sit on big haymakers but on the ground would be focused on explosive scramble movements to get to his feet. Chuck Liddell was a technical, accurate and powerful striker and kicker. His ground game was entirely based on sprawling to avoid being taken down (same for Robert Whitaker). 

Descriptions like 'pressure fighter' could describe both Max Holloway, a high volume pressuring strikers, and Khabib Nurmagomedov, a chain-grappler who tries to force clinch engagements into takedowns and strong to pressure.

Definitely a bit tricky to lineup the right way.

yes for sure, an MMA game would be great. Fighters could join as MMA fighters but there could also be individual disciplines simulating at the background and you could be able to convince someone to cross over to MMA. would be great if average kickboxers became great at mma or a top BJJ guy couldnt adapt as well, vice versa

The way I have it at the moment is fighters will be generated who want to move to MMA, and these fighters will already be from other disciplines mostly with higher class depending on what they achieved in that other discipline.

So you will be able to pick up an average kickboxer or wrestler or whatever and try train them into a great MMA fighter.

Not simulating these other disciplines though...will add too much to the workload of the game.

In case you are still making this might be worth looking at WMMA5 for inspo, the best mma sim and only decent one out there.

One thing they did well was fighter traits for fight simulation so every fighter fought different somewhat.
For example volume strikers, strikers who kick a lot, pressure grapplers, headhunters
and Merab type relentless takedown chasers etc
Traits also meant that it wasnt necessary that a wrestler always wrestles and KB avoids ground, so you got Johnny Hendricks type wrestlers who liked to strike too if they had good power and stand up fighters who liked to mix things up

I've done it more based on "technique stats" to determine what their traits are.

So if a wrestling background fighter becomes really good at striking he'll use that as well rather than always going for the takedown.

Also ofc it will depend on the opponent. A good grappler/submission specialist facing a better striker will try  taking it to the ground whenever possible.
